Monkey Bars (vegan)

There is always a struggle to find healthy snacks that are tasty, and not full of extra processed junk.  Granola bars are one of my favorite go to snacks to make at home, because they are always a hit and they’re so easy to make!  Monkey Bars taste similar to supermarket banana bread bars and they’re a breeze to make!

Ingredients

  • 1 mashed Banana
  • 2 Tbsp coconut oil
  • 1/4 cup plus 2 Tbsp maple syrup (or your choice of sweetener, agave works well)
  • 2/3 cup nut butter ( I used chunky peanut butter)
  • 1 Flax egg ( 1Tbsp flax meal, 3 Tbsp water)
  • 1 Tbsp chia seeds
  • 1 1/2 cup rolled oats
  • 1 cup puffed rice cereal
  • 1/4 cup cacao nibs

Preheat oven to 350 degrees.
Combine flax meal and water, set aside.
Combine rolled oats, puffed rice, and chia seeds in a medium bowl.
Add nut butter, coconut oil, maple syrup, banana, and flax egg.  Mix until well incorporated.  Incorporate cacao nibs into the mixture.

Spread mixture into a parchment lined 8x8in baking pan.  Bake for 20-25 minutes.  Allow to cool completely before cutting into equal pieces.

Alternately, you can leave out the flax egg and add extra maple syrup, combine all your ingredients and place in the refrigerator until firm.  Keep either type of Monkey bar stored in an airtight container in the refrigerator.  Enjoy!
